In honor of Fat Tuesday, I'm going to talk about getting skinny. (However I did make these beautiful no bake cookies today, in honor of Fat Tuesday)
I started this year with two BIG goals. I'm happy to say that I have been fully committed and working diligently on both (business revamp and losing weight/getting fit). Albeit, both are moving slower than I would have liked ... BUT, when you have BIG goals, it is best to fine tune and develop them with lots of CARE.
Today I hit a milestone. It's a fitness journey milestone. Today was the first day that someone noticed I've lost weight! Anyone who has tried to lose weight KNOWS that this is a a momentous occasion. For me it's a fine line on when you can really tell that I've lost weight. I've officially lost 6 lbs (I weigh on Fridays) and am about 27% to my overall goal. So still a LONG way to go. However, the compliment (given by someone I admire at the Y) was just the BOOST I needed to keep going, stay driven, stay committed and continue to work hard.
What am I doing to lose weight? Oh you know, good old fashioned EAT less and exercise MORE. :) Seems to be the best option for me! I try to work out 5 days a week for at least an hour; adding in weights 2-3 times a week. One of those workouts is with my trainer (I feel fancy saying that but its not that fancy!) I'm counting calories using My Fitness Pal and limiting them to 1200-1500 depending on my calories burn at my workout. I wear a Polar FT 60 heart rate monitor so I know my exact calorie burn.
And it's as simple as that. Getting there is half the battle. The good news is that I'm also getting stronger, giving more in my workouts, doing more reps/weight where necessary and feeling better. Overall, a GOOD health day for me. (minus that part about the no-bake cookies and me eating one ... or two. No worries, it all gets counted!)
For those of you who don't need a fitness journey or don't care and really just think those cookies look delish and want the recipe ... here it is ...
Classic No-Bake Cookies: Melt 1 stick butter, 1/2 cup milk, 1 package melted chocolate (we use the Hershey's that comes in packages pre-meted; use 4 T of cocoa powder if you don't want to use this!) and 2 C of sugar together -- bring to a boil for ONE MINUTE. Remove from heat and add in 1t vanilla, 2/3 cup of PB and 3 C of oats. Stir together completely and then drop by spoonfuls onto wax paper. Cool and serve. YUM. I loved making these as a girl with my mom and today I wanted to make them for the kids (Gluten Free but not Dairy Free) so my mom text me the recipe because I always forget it. *she uses 1/2 C Peanut Butter but I always throw in a little extra.

I know exactly what you mean-it feels good when someone notices. Someone, or maybe 2 people, actually called me little :) I have not been called little since I was 5 or 6?! I have lost 25 pounds since last May. I started weight watchers (we have it at work, thank God) last May, then the swimming in October, which totally made a big impact on my weight loss. Good for you! It feels good to get healthy doesn't it?!

You keep going girl! And eat all of those cookies before I get there. Although I've been pretty good, it's still easy for me to fall off the wagon!
