This has become a new EASY favorite meal in our home ... Salsa Chicken & Rice.
One night I wondered into the kitchen unsure what I was going to make ... it was already after 5. Ever happen to you? I TRY to think ahead of time, but some days it just doesn't happen. I roamed the cupboards. I had defrosted chicken tenderloins, rice, salsa and a few other random bits. Then I remembered a recipe I had seen in Pampered Chef: Recipes from the Heart cookbook (which is a terrific cookbook BTW). I found the recipe and adapted as needed and came up with this:
1T Olive Oil
1T Minced Onion (or 1/2 a real onion diced)
2 Garlic Cloves chopped (modified using Garlic Powder since I didn't have fresh garlic on hand -- used about 3/4t)
1 Cup Chicken Broth
1 Cup Picante Sauce/Salsa -- choose your spice wisely (mild, med, hot!)
1lb chicken pieces (salt& pepper these)
1 Cup Long grain white rice (have yet to try with brown rice; likely just need to adjust liquid and cooking time a bit)
1 medium tomato chopped (I actually used a can of Rotel, drained)
In a large skillet saute the onion/garlic in the Olive Oil. Add the broth and salsa bring to a boil. I add the can of rotel in there too (give a spicy edge to the dish!). Arrange seasoned chicken on top, cover tightly and reduce heat to simmer for 20 minutes. Voila. Serve with toppings of your choice.
Yum. And EASY. And bonus ... THE KIDS LIKED IT. The call is "spanish rice" and LOVE it. I have to watch the spice factor for the reason but this was a WIN-WIN for us! Hope you like it! (ps. It's Gluten Free!)
